Ingredients

50 ml Jules Gautret VSOP Cognac
3 dashes Peychaud’s bitters
10 ml cane sugar syrup
15 ml Absinthe
Garnish : expressed lemon peel

Steps

1. Make the cocktail in a mixing glass
2. Swirl the absinthe with 3 ice cubes in an Old-Fashioned glass3. Fill the mixing glass with ice
4. Pour in the cognac, sugar syrup and Peychaud’s bitters. Stir 20 seconds with a spoon
5. Remove the absinthe and ice cubes from the Old Fashioned glass and strain the cocktail in the serving glass
6. Garnish with an expressed lemon peel
